Intense plum colored with purple tints. Lifted aromas of dried fruit and cassis. Lovely soft rich mouth feel with complex characters of spice, plum and complex hints of fruit cake. The finish lingers with fruit sweetness and firm ripe tannins.

maker's Notes:
Fruit was harvested at optimum flavour and ripeness. Hand Harvested fruit destemmed into small batch lots for fermentation. A proportion of fruit was cold soaked, with some being innoculated directly. A combination of punching down and pump over were used for extraction of colour and tannin from the skins. The must was pressed using a gentle airbag press and pumped to barrel. Malo - Lactic fermentation was conducted in a combination of tank and barrel. A combination of French and American oak was used. Both new and seasoned tight grained barrels.
