This wine is ready for immediate consumption but will continue to develop and complex with some bottle age.
Tasting Notes:
Pale straw with a green hue and brilliant clarity. Fresh and lively with an intense grassy / capsicum aroma, with hints of tropical fruit. Dry wine displaying strong varietal fruit flavours typical of the variety, which are enhanced by the crisp natural acidity.

Estate Grown Single Vineyard in the Dartmoor Valley, on root stock, pruned to 2 cane VSP 2011 was an interesting vintage, a little cooler than average giving fantastic ripening conditions through a long cool autumn. The fruit was picked in four different lots for optimum ripeness and flavour. The grapes were harvested and taken to the winery. The fruit was gently pressed. The juice cold settled overnight. After settling the juice was racked and inoculated with yeast. Fermentation was conducted cold to retain fruit flavours and lasted approximately 5 weeks. Just prior to completing fermentation the wine was racked off heavy yeast lees and left to settle on light lees. After 1 month on light lees the wine was blended, fined, stabilized and filtered prior to bottling.
